I wrote about my favourite cold sweets last week.

Japanese summer is really muggy and unpleasant, so Japanese people often eat something cold for lunch and dinner as well; not just sweets. There are all sorts of cold dishes and many of them, I think, are noodle dishes. One of my most favourite is hiyashi chuka – this is sort of cold ramen. I wrote about ramen here sometime ago and Japanese people love cold ramen as well!

In summer, any ramen restaurants in Japan serve hiyashi chuka. The photo above shows hiyashi chuka served at a restaurant in Tokyo. Since this is a restaurant dish, the toppings look really gorgeous!  But, you do not have to necessarily go to a restaurant to eat hiyashi chuka; you can cook this dish at home too.
