Christmas cake in New Zealand and UK is not like these cakes at all. The Christmas cake here contains a lot of dried fruit and alcohol. According to Delia Smith, a UK food writer, Christmas cakes should ideally be baked eight weeks prior to Christmas Day and let it mature. If you like, you can “feed” the cake during that waiting time!
